Today, I’m super excited to share one of my new favourite recipes: the viral TikTok s'mores cookie. This is one of those TikTok recipes that I tried and realized it’s actually genius.
Now, I’ve got to admit, I have no idea who the originator behind this recipe is. TikTok is a funny place that way; recipes pop up, spread like wildfire, and next thing you know, everyone’s making them without really knowing where they came from. It’s kind of sad how creators often borrow ideas without giving credit, but that’s a whole other issue I’ll save for another day. We may not know who started it, but we can all enjoy it and add our own twists.
So, when I saw this s'mores cookie trend on TikTok, I knew I had to give it a try. Imagine taking that campfire flavour and baking it into a cookie. It’s like a warm hug in dessert form, and honestly, who wouldn’t want that?
You already know how I feel about cookies. They’re my ultimate comfort food. In fact, I encourage you to use my cookie recipe for this because it will add that extra depth of flavour with browned butter—something that is just one step above store-bought cookie dough. Whether it’s a classic chocolate chip or something a bit more adventurous, cookies just have a way of making everything better. And these s'mores cookies? They’re on a whole new level. The crispy graham cracker, the gooey marshmallow, and the melty chocolate all wrapped up in a soft, chewy cookie—pure bliss.
Why? Because Science
The cookie dough, when placed on top of the s'mores, acts as an insulator, slowing the heat transfer to the marshmallow and chocolate. This ensures that the marshmallow and chocolate melt gently and evenly without burning. The graham cracker base also plays a role by providing a barrier that prevents direct heat from reaching the chocolate and marshmallow too quickly.
Insulating Effect of Cookie Dough: The dough’s insulating properties are due to its composition, which includes fat and moisture. These elements require more energy to heat up and transfer less heat to the underlying layers.
Graham Cracker Barrier: The graham cracker’s dry, porous structure allows it to heat up quickly but also dissipates heat, preventing the bottom layers from becoming too hot too fast.
Controlled Melting: This controlled heat transfer allows the marshmallow to soften and expand while the chocolate melts gradually, creating a perfectly gooey and cohesive filling without any of the components burning or becoming overly fluid.
Result: This controlled melting ensures a balanced texture throughout the cookie, with a soft, gooey centre from the marshmallow and chocolate, and a slightly crisp exterior from the cookie dough. The cookie dough browns and cooks at the top, providing a contrast in texture and preventing the marshmallow and chocolate from overheating and losing their structure.
Ingredients:
12 pieces of graham crackers (about 250 g / 9 oz)
150 g (5.3 oz) chocolate bars (use your favourite type; dark chocolate is a great choice)
12 large marshmallows
350 g (12.3 oz) cookie dough (store-bought or [use my cookie dough recipe])
Tools Needed:
Baking tray
Parchment paper
Wire rack for cooling
Method:
1: Preparation
Preheat your oven to 175°C (350°F).
Line a baking tray with parchment paper to prevent sticking.
2: Assembling the Base
Arrange graham crackers on the prepared baking tray, ensuring they are evenly spaced.
Top each graham cracker with a piece of chocolate, breaking the chocolate if needed to cover most of the cracker’s surface.
Place a marshmallow on top of each chocolate piece, centring it for even melting.
3: Preparing the Cookie Dough
Divide the cookie dough into 12 equal portions.
If using pre-frozen dough, thaw it in the fridge beforehand to ensure it’s soft and pliable.
Flatten each portion into a disk using your hands.
4: Baking and Cooling
Place one flattened portion of cookie dough on top of each marshmallow, pressing gently to cover it completely.
Transfer the tray to the preheated oven and bake for 12-13 minutes, until the cookies are golden brown and the marshmallow is gooey.
Let the cookies cool on the tray for a few minutes to set, then transfer them to a wire rack to cool completely before serving.

Chocolate Variation: Experiment with different types of chocolate like dark, white, or flavoured chocolates to add a twist to your s'mores cookies.
Homemade Cookie Dough: For a personalized touch, use your favourite homemade cookie dough recipe.
Using Pre-Frozen Cookie Dough: If you are using pre-frozen cookie dough, make sure to pull it out of the freezer and let it thaw in the fridge for several hours or overnight. This ensures the dough is soft and easy to work with. It’s important that there is enough cookie dough to blanket over the marshmallow for this recipe to work properly.
Marshmallow Control: If you find your marshmallows are oozing out too much, you can freeze them for a few minutes before placing them on the chocolate. This helps them hold their shape better during baking.
Preventing Sticking: If you notice the cookies sticking to the parchment paper, slightly grease the parchment with a bit of butter or non-stick spray before laying down the graham crackers.
